Our ARM & HAMMER® sodium bicarbonate is as a chemical leavening agent for baked goods. The sodium bicarbonate react with acid and release carbon dioxide. These bubbles of carbon dioxide cause batter and dough to rise, making for lighter biscuits, cakes, pancakes, cookies & a host of other baked goods. Our Tortilla Blend® is a sodium bicarbonate product formulated to produce leavening reactions at specific stages in the production of wheat flour tortillas. The Tortilla Blend® is used in combination with conventional leavening acids to optimize leavening performance.
